Your right Rick, I love having a back stock. I went back to the store that has the potatoes on sale and bought 30 # more. Now I have 50# for $9.90 amd hopefully it will fill a bucket.

I plant potato peelings with eyes, so this spring I'll dehydrate the day I plant. I get the funniest looks when I tell people what I do. I just cut about 1/4" of tater with the shin and plant 'em. Then I eat the rest. Cheap bastid. lmao
Today I bought 3 bags of frozen mixed veggies. Thats tomorrows 'work', dehydrating them.

Well I jumped right into the first 10# of potatoes. Washed them, used the veggie slicer attachment on the mixer to slice them and onto the trays. I woke up this morn to 9 trays of the blackest potatoes I've ever seen. I forgot the step where you boil them. HaHaHa. Well live and learn I guess.

That's funny Walt, can't wait to see what my early ventures will produce. ;D Do those machines come with an instruction booklet ? I'll prolly create a nuclear meltdown with mine.

I have an American Harvest with 10 trays in it, and it does a fine job. I just wanted bigger and better, and quicker. I will keep the American Harvest as I need all the capacity I can get real soon, Morels are starting! Excaliber has a DEAL on new factory refurbished (slight imperfections in finish) the cost is $168.00 for the 9 tray and it comes with a 10 year warranty.

Learned that in dehydrating frooot, it's best to choose them a bit on the firm side, as opposed to full ripe as for eating. My peaches and mango's were really ripe, and there wasn't much left after they were done. LOL. They went FLAT and are more like a mango 'tater chip than a dehydrated slice 'o frooot. Experience is a wunnerful thang, ain't it ? ;D

Did some more mangoes yesterday. I also dehydrated the peels because I understand that once they are dried, you can chop them and keep them to make herbal teas with.
