That's a great project! I plan on doing some more of that today myself as the big bags of frozen vegis were on sale yesterday. It's so easy!

Do you thaw them out, or just chuck 'em in the dehydraterater?

Just chuck em in the dehydrator, turn it on... about an hour in to drying mix it around on the tray a bit. In our dehydrator they are done in 8-10 hours.
My wife did a normandy mix as well. Today we're going to rehydrate them and try to steam them. We like steamed vegies and want see how they turn out. If the come out ok, we're going to dehydrate all the vegies in the freezer from now on.

Hey, thas' cool Andy. Now what will you do with those out of the jar, soak in water, then cook or put em in soup, or what ? Nice dehydrator, large enough to do a lot at once. What supplys the heat for that thing ?

Rick, it's powered by a 110 heating element and fan, I also have racks for outside when SHTF. We will either rehydrate them in soups or just cook them. My wife also does a fried rice recipe and uses them in it.

Yeah, she rehydrates the vegies then boils white rice. Once that's done she fries up some diced ham, scrambles an egg and mixes in the rice and vegies with the ham and egg, as some soy sauce and bingo it's doen. She found a sweet and sour sauce on the internet and we have a meal for dinner and left overs for lunch the next day.

Our recipe for sweet and sour sauce is:
2 tablespoons corn starch 1/2 cup sugar 1/4 cup white vinegar 1/4 cup pineapple juice 2 teaspoons soy sauce 1/4 cup water
Combine ingredients in a small sauce pan and bring to a boil. Simmer gently for 5 minutes, remove from heat. Serve immediately or store in refrigerator and serve cold.

Well-my project wasn't really dehydrating-but it was drying.....
I made candied ginger. I was appalled at the price of the stuff-and I have used it in several different recipes including chutney and ginger snaps. I bought the big ginger bulbs and made it-it turned out well-it took longer to dry than what I thought but no biggie.
The small McCormick 3 oz. jars of it were over 10 dollars. I made almost a quart for about 5.00. ;D
