I think as long as they are cut small enough and you make sure you blanch them, they should be fine.

I love broccoli too, I like the whole thing, we eat a LOT of it, I vacuum pack and freeze, we have within 10 lbs + or - 100lbs in the freezer...did I mention we love broccoli here ;D Rick, I will post up the recipe for the soup for ya. I took a recipe out of a book and added this and subtracted that figuring on what we like, I surprised myself, it came out better than expected, and I learned a while back when doctoring recipes, WRITE IT DOWN, because due to my having gone through the 70s... sometimes the memory isn't exactly in pristine shape.

"we'll watch rick for ya, mom!" wow. I also often say..... Huh? Wha? I knew i was a moosh mind when I once looked for my sunglasses for 3 hours. Yep, on my noggin'. Its amazing to me that i still function at a do-able capacity. Lol

So I've become a dehydrating nut. ;D
I am figuring that depending on the vegi, I am fitting 3-4 lbs in a 1 qt jar. Love it! I bought 10 bags of frozen vegis in one of those 10 for 10 specials. I am through my first batch, just starting my second. Vac sealed in mason jars they should last a good long time.

I have been taking all of the frozen veggies out of the freezers and dehydrating them, one more load and I will be done. I have a case of canned peaches we picked up on sale; they are taking up way to much space, so I am going to rinse them good and let drain and then dehydrate them. I think they should be great for snacks and on oatmeal.

Heres a good 'DUH!' for ya. Before bed the other nite, i blanched broccoli and started dehydrating. Got up the next morning, flipped em all over, inverted the trays, and off i went. Jumped out of bed last night cuz i remembered the broccoli. Oops. Its dehydrated alright! Fit a whole 6 trays in a 32 oz. Mayo jar. Better than being under done, i guess. Still went DOH!

I've been experimenting with making apple chips. Plain is good but a little sugar and cinnamon sure makes them better! I like the sweeter variety of apple better. The granny smith are a little sour for me once they are dried. I vac sealed those for later. The kids are wiping me out on each batch that I make. My FIL went nuts over them so I am making another batch for him for when he comes over on Thanksgiving.

My kid wants banana chips. When ya use ascorbic acid/ fruit fresh, do you sprinkle it on, or put some in a ziploc with the 'nanners and shake shake shake? Hate to beat em up!

I dissolved my ascorbic acid in water and put the banana slices in there and then on to the dehydrator racks, made a big batch back in the winter last year, still eating them, the dog likes them for treats too.

Thats funny. My old dog Harley ( shepherd, greyhound, pitbull, wolf ) would sulk for HOURS if you didnt share your banana with him. I mean head in the corner, no eye contact, nothin. I didnt forget often, but when i did... Geesh, guilt trip from a dog! Prolly learned it from the redhead. Think i'll buy some 'nanners next time shoppin. Miss my dog. Dont miss the redhead.

I just put any fruit I am drying in 2 qt water with 2T. of lemon juice from the dollar store. Sure is a lot cheaper than fruit fresh. Just let them soak a couple of minutes. Do the same when I am canning fruit.

How's your dog doin Wayne ? And where did your's go Rick ? Hope he din't..... Mine is the same way, when there are other ppl around a dog is kinda,,, a dog, but when it's just man n dog, they are scarey sometimes at how much they understand, and actually try to communicate.

He is slowly healing, it takes a good 4 months or so to recover from that surgery. He is walking almost limp free, and he can climb the stairs and jump up on the bed, so all in all, he is a pretty happy dude. He will be 11 Christmas Eve, he is slowing down some, but that is relative, being a Weimaraner, he has been borderline bouncing off the wall most of the first ten. Actually, he is curled up on his bed right next to me in the computer room. He even has a real people pillow. ;D
