I didn't can anything today, I just cracked open a jar of pickled chili's and a can of pickled okra... Man both of them are good!

We canned 4 quarts of turkey broth and froze 1 quart. We'll use the frozen one for soup this winter.

Cluck cluck thwak pluck pluck smoke chop can only thing that could make this place smell better would be bread. Oh, yeah. Turkey stuffing cran. Sauce samiches. Tomorrow.

Birdzilla update: 18 quarts meat with broth, 4 quarts and 8 pints broth. Ran outta quart jars. Lol next time i smoke a bird that big he's getting chunked up smaller before smoking, but it is still pretty smokey. Boiled the broth down by half, make gallons of soup stock. If i wanna can more, its either buy jars, or get eating. Wonder which it will be?
Wayne, that sucks about the leftovers. Good thing is that turkey be cheaper this weekend. If i can find some natural birds, I'd can more in a second. Probably hold off for the chevon in about 10 days.

I don't know if I've ever seen a 32 lb turkey before! I wonder if it would even fit in my oven, lol!

My brother and me raised them on range. ( with grain) He kept the big one. 39 pounder! All i know is they were white. Honestly, didnt look real big until we put them in his truck cage doohinkus. I kinda had to push the last one to close the gate. Next year he says bourbon reds or narragansett. Dont ask me, hes the fahhhmah! Also canned sharp cheese today. 5 pints. Been wicked busy, which is good. Sample less that way! Oh and fyi, my gf is tiny, 95 pounder. Turkey leg was bigger/ longer than her forearm. Kinda funny wish i could post pics.

Way back when I first started Deberosa I, I had a turkey to beat all turkeys! He had to be 50 pounds! I waited way too long to get him into the freezer mainly because I didn't know how to go about it! I had just tought myself how to do chickens, and I could get through a turkey as long as I could get the deed done, but holding this boy's head over the chopping block while aiming an ax just wasn't going to happen! After many months after this picture was taken, I decided to slit his throat. I did it by sitting on him and reaching under his throat. That really worked well. That turkey raised me right off the ground and tossed me into the fence while it went flopping along! I eventually did get him processed, but for sure even half of him would not fit into the oven but he made wonderful smoked turkey. I drug him over to a cast iron bath tub that I had up on cinder blocks and built a fire under it to scald him. Wish I had packed that tub for here - can't find one like it!

Sandy found a deal on ground chuck yesterday. 13 jelly jars came out 20 minutes ago, browning another batch in the 18" frypan at the moment. Figured to save them for TSHTF, to add to rice and to make chopsuey. If nothing else breaks down this weekend, I'm gonna try to get 30 pounds more, and do it up in pints and quarts. Thinking of doing some pints with homemade taco seasoning.

I haven't canned anything for a while, I think maybe next week I will cook up one of the Turkeys I have in the freezer and can it up as well as make soup.
