I know what you mean Wayne, our first frost is around the middle of October. I'm gonna try to get some stuff planted this afternoon... We'll see what happens. Maybe I'll go get some row covers.

I've been busy putting up tomatoes...tried a new idea to get most of the water out without firing up a stove or the like ....so far it's worked flawlessly!!! I washed the toamtoes well...put the suckers in the freezer to freeze solid.......remove them from the freezer....run them under water for a few seconds....the skins peel right off. I dice the whole frozen tomatoes into 1/2-3/4 inch pieces....place then in a collander for at least 24 hours....stirring a couple times....that'll remove a good share of the water and soften them up enough for the china hat or food mill. I save the liquid for veggie stock. Sure saves a lotta boiling down!!!! ~Martin

That sounds like it is well worth a try, I have a lot of hours into boiling down.

Perfect timing fellas. I'm buying a 1/2 bushel or so of tomatoes this weekend for my first attempt at canning. Gotta go look to see if this forum has a Recipes section and a Spaghetti Meat Sauce recipe to attempt.
