Over the weekend I canned up 4 pints of green tomato salsa-I had a lot of green tomatoes left over from the mass picking when we thought Earl was going to hit us.
I also made 9 pints of spaghetti sauce. I thought it was weird that the sauce recipe I tried called for pint jars but I went with it.
Am going to make Wayne's sauce recipe next.

CCM,
I always seem to end up with at least 1 pint when I am cannng quarts of sauce anyhow, and they are handy to have on hand for a quick dinner for two, or to add to another recipe. I made sauce the last two times and added crushed dehydrated morels to the sauce...OMG, it was good, I can't imagine how good it will be after the jars have sat for awhile with the morels flavoring the sauce.
I picked more dang tomatoes today, I am not making any more sauce we have about 60 quarts. I think I will do stewed tomatoes, or tomato juice cocktail, or whole tomatoes. We still have hundreds still ripening, and the plants are putting out blossoms, they will never finish ripening before our first frost.

That's funny because I had a bag of dehydrated shitake mushrooms that I used in the recipe!!!! It also called for red wine which I halved. It smelled delicious cooking.
I don't think you'll even need to plant tomatoes next year-holy smokes! 60 quarts? I take it you made more shelving, lol.

I take it you made more shelving, lol. Not yet, that is on the list, it is all boxed and stacked, I ran out of room on the shelving in early spring, I even bought the boards to make more, just haven't had the time yet. It will probably be a winter project, I have another whole half of the cellar to line with shelving yet, then I may have to find some free standing store shelving to run down the middle for more space. This is good though, it is providing me with ideas to build into the new house.

Am in the process of canning 18 more quarts of milk. Then I'll start canning the butter this afternoon. STILL haven't gotten around to the carrots and cabbage yet --- maybe later today.

I had a bunch of bananas that had to be used up quickly yesterday so I found a recipe for Banana/Pineapple Jam. Made about six half pints. I have another bunch that I'll make more banana bread out of this weekend.

We just finished processing seven pints of pickled chili's and will be putting four more in the canner as well as probably four pints or pickled okra. Last week I gave away probably a half bushel of them, one of the ladies I gave them to said she put them in a box and shipped them to her sister in New York State... She roasted and canned them for winter salsa.

I found some frozen raspberries in the freezer (isn't that funny how that happens). I threw together a batch of raspberry jam. It seems to be everyone's favorite (especially my nephew) so I am happy to make more!

My nephew is fond of those chocolate covered granola bars. He spreads the raspberry jam over the top of them-yum!

It is a lot more cost effective to use jam that you made as well, store bought is forever increasing in price, home made is cheaper and tastes better.... I have a bunch frozen that I need to cook up for jam.

I've seen the cost of jams at the store. It's ridiculous-that and Salsa! Good grief the good stuff is almost 4.00 per jar!

I've got 7 pints of chicken breasts in the canner right now. I'm going to do another 5 or so later on. I had to drop the dog off at the vets for his little "surgery" so I'm having to watch the phone for when they call me and tell me that I can go get him. The poor guy has a heart murmur so they have to watch him when he comes out of his anesthesia.
I have plans to make pumpkin butter later on too.
