Alright guys, let talk canned ground beef. We canned up several pints last night according to the directions, they sealed find, however this morning we found a ring of hardened grease at the top of the ground round. The question is will this go rancid in the can? This is the first time we have canned a meat product.

No, I've never had it go rancid. Now deer and the like are different, any amount of fat will get strong flavored, but not rancid.

That is common Andy, no worries, it may look nasty, just remember, fat = flavor!!
