This week we dehydrated 9 trays of bell peppers, day they were done my wife cut up onions and dehydrated 9 trays of onions. We are loading all of our dehydrated stuff into quart canning jars so we have them filling up and are having to find a place for them.
Yesterday I picked up london broil for 1.99 a pound so I am going to slice this, marinade it and throw it on the excalibur. I like my jerky very much like the old timers, extremely dry, not chewy. We are going to be stocking up on jerky, dried hamburger and probably dried chicken as well.

Nice AZ!!..I am still using an American Harvest dehydrator, so I haven't gotten into any serious dehydrating yet, I am hoping for an Excaliber soon. We have been drying hot peppers non stop since July, they are all stored in gallon zip lock bags right now, but we will move some to quart jars, and we plan to grind some for additions to soups and stews. I have not had the time to dehydrate as much as I would like, but plan on making more of an attempt in the future.

Wayne, The American Harvester is a good product, I think though you will find when you get the Excalibur that you will like dehydrating stuff A LOT better. I found that it's faster and easier to clean. Granted the cost is a huge issue, but things that took overnight in an American Harvester type product only take about 8 hours in the Excalibur even with all 9 trays loaded.
Speaking of hot peppers we are going to be canning a pickling a bunch tomorrow.... We have dehydrated already... That means about 8 quarts so that can be put in recipes or ground and put in soups and stews. Because we do have so many dried chile's and peppers I am also going to try to roast and pressure can some chile's this weekend.

That is exactly the reason I haven't done as much. I can fill the dehydrator with peppers, and it take sometimes 24-30 hours to do 6 trays. 8 hours would be really nice, I could do 18 trays a day and really look like I have accomplished something.
I roasted and pressure canned jalapenos last year, and they came out great, I also water packed without roasting and they are fine too. This year I decided to get a little fancy and took Jalapenos, Hungarian Hot Wax, and Cherry Bombs, cut them all in rings, and then pickled and water bathed. Haven't tried any yet, but they look awesome in the jars.

I pickled my peppers this time too Wayne. I don't have a dehydrator myself. I haven't tried them yet either but when it comes time to make chili this football season, they will be used I'm sure! I have some more coming in the garden that might be ready this weekend.

I have some more coming in the garden that might be ready this weekend. Can I send you a bushel?..LOL....I have so many peppers this year it isn't funny. I have processed as many as I can, and pawned them off on neighbors to the point they close their drapes and don't answer the door if they see me coming..hahahahaa 6 plants of each variety is way too many, although my bell peppers were the best they have ever been, Lynn made stuffed peppers last week, and they were fantastic!!.

8 pounds of jerky is on 6 trays of the dehydrator right now. As soon as that comes off the trays get washed and 40 pounds of apples get peeled, cored and sliced and they will go on. That will probably be tonight.

I just got my new Excalibur by UPS today and the only thing I have in the fridge to work with is 10lba of carrots so I am doing them today. I'm excited to see if this thing works as good as everyone says.

Conrats cutter! I have a Ronco that is slower than turtles fornicating, but it works...slowly. Everyone I know that has an Excalibur loves them. If needed, there are lots of vids on you tube for idea's. I cant afford any more idea's, myself!

Safeway had a sale on Broccoli, 39c lb. I bought 30lbs and parboiled, vacuum sealed and froze 15lbs and cooked and dehydrated 15lbs. I tried some of the dehydrated and it came out pretty darn good I love Safeway's loss leader sales.

The broccoli came out so good I went back and bought a 20lb case and dehydrated it. I looked at the receipt as I was leaving the store. 20lbs of broccoli 49.95 discount with Safeway card $41.50. Cost $8.49. What a joke.

I wish I had some stuff from the garden to dehydrate now that I have my Excalibur, problem is, the garden is about 5 weeks behind where I was last year, so it will be a while yet.
