PEACH SALSA
6 Cups of Peaches, peeled and diced 1 1/4 C Red Onion 4 Jalapeno Peppers (or your preference for hotness-I deseed them too) 1 Red Bell Pepper chopped 1/2 C Fresh Cilantro (I use less) chopped fine 1/2 C Vinegar 2 TBSP Honey 3 cloves of garlic finely chopped 2 tsp. Cumin 1/2 tsp. Cayenne
Bring all ingredients to a boil. If the peaches are not quite ripe, I cook them until just softened. Put in hot pint jars and waterbath for 10 min. Makes about 5 pints.

;D Oh yeah ! I'm a sucker for a peach too Andy. I'd walk a mile for one. Picture some of that on a hot buttered bisquit !!
